    January 12, 2017 - Had this out of magnum at IB&WS event last night at 11 Madison. Gorgeous nose of dark cherry with a hint of cinnamon spice. On the palate, it shows just a bit of the stewed fruit of the vintage but also plenty of structure and good acidity. The wine is quite fresh with plenty notes of dark cherry fruit. Then it builds to a highly complex, red spice-driven finish with notes of barnyard and minerals. Ready now and simply fantastic for a NSG.

    April 16, 2014 - This was a total headturner and my WOTN amongst some big hitters like a '95 Haut Brion. This one btl is the poster btl for great Burgundy with significant blt age. It also continues to confirm why Robert Chevillon is one of my top 5 producer in all of Burgundy. This had amazing depth on a lovely evolved silky but fresh frame.

    July 1, 2008 - Tasted with Scott Roddy, who graciously shared this bottle with me. Wow!, what a wonderful deep red hazy color. Very natural looking. On the nose a very sure mushroom smell. Not strong or in your face, more like walking through the forest and smelling a fresh patch of them just up ahead. Also hints of forest, maybe in Autumn. Nice strawberry and red fruit nose. The taste is rich and elegant. Incredible smoothness and a long finish. A very nuanced wine, I wish I had cases. Man, the Chevillons I have had lately have been very impressive.

Everything about this wine is redolent of forest floor, underbrush, and black soil and marries superbly with those mushrooms, as Burgundy always does. Lovely, typical Les Cailles from Chevillon; drink from now until 2015 at least.
