    December 30, 2023 - I’m always somewhat apprehensive when I open one of these older bottles: you never know whether they’ll be reduced and require a long decant; or flat, and on their last leg; or like this wine, just perfect and ready to go at 30 years.

    Very tight, and very dry cork, which broke in half with a cork puller; used a screw to remove the remainder. Poured a bright, slightly bricked deep garnet color with clear edges. Fresh, balanced and aromatic, no decanting required. Intense aromatic and flavor profile showing dried rose petal, tar laced earth, dry sour cherry, wild raspberry, sawdust, old spice rack, and stony red granite. Very dry mouthfeel. Structure is perfectly integrated, but lingering. Finishes very long and satisfying; perfect with the baked, stuffed pesto salmon and penne. Drink now though 2025. This drank far more youthful than a 30 year old wine, highly impressive.

    June 17, 2023 - Very enjoyable with lasagna on Shabbat. Fruit was present along with tertiary flavors and balanced acidity. I think I like them a bit younger but this was still a treat.

    Liz liked it a lot.

    June 11, 2023 - Drinking really well right now to my palate. It had about an hour of air while I cooked dinner, but otherwise, no decant, just pop - then an hour later - pour. Fruit was both subdued and yet fully present, unfolding into a deep, round, nuanced mouthful of goodness. Has some enjoyable glycerin-y texture lurking in there too (which in my limited experience, I would normally associate with certain Pinot Noirs.) Did really well with my sweet potato gnocchi/organic pasture-raised sausage dish (which featured lots of sage, garlic, etc.). Also doing really well as a sipper after dinner. Sure seems it has plenty more life left, if properly cellared. Now I wish I had another one ...

    May 29, 2023 - Wow. 45 min. decant. So much freshness combined with incredible depth. This is what aged nebbiolo is all about. Roses and cherries mixed with horse saddle and even some deeper barnyard funk in the best way possible. Tannins melt in your mouth and the finish goes on forever. What old wine should be.
