    December 6, 2011 - Great Cab. Drank with some spicy dried chorizo and irish cheddar while waiting for our meal. Right as the bottle opened it paired perfectly. 45 minutes later with dinner it the dark cherry was still there and the tannins were more evident as well. This worked for us quite well.
