To be sure, if this were fresher I have no doubt that there would be much more fresh apricot profile on the palate, but that said, this is still incredibly apricot-dense (I guess I could always add a drop of Roulot's liqueur to amp up the flavour). High acid, yes, but much more subdued and balanced than other Cantillons, with a very rounded, spherical presence on the palate. I love the aromatics on the nose, and the subtle apricot pit bitterness on the back end -- without the doubt one of the best Cantillon bottlings there is.
