August 24, 2007 - Last bottle of about 2 cases. Have not had one in years and this was an experimental bottle to see if it could age. What set this wine apart from just about every Languedoc red that I've ever had was the purity of aromatics. There was a pure lavender aroma that made me feel like I was l'Occitaine buying crap for my girlfriend. Well it retained this profile to the very end, still some nice fruit that was very blue and cool (this wine has never showed any hot aromas or flavors). Clocked in at a very reasonable 12.5%. I've never been taken with another vintage of this in the same way, nor by any other Languedoc red (although I have enjoyed others, just not in the same way). An interesting wine whose like I may not find again.
