Community Tasting Notes 2

March 6, 2023 - Nose: flint stone, pineapple, Guava, cheese, red date, green tea, mango, sponge cake
Notes: Opened for 2.5 hours and tasted together with a 2016, what amazes me is that the 2010 is still so young and energetic in every aspect, the nose and palate are still quite fresh for its age and the color suggests that this wine can be kept for so much longer. It is quite frustrating that the premox problem has deterred us from keeping whites further. The 2010 Dancer I felt was a bit too steely at this very moment and the minerality was a little overwhelming and dominating. This wine should certainly benefit from several more years of cellaring, the profile right now does not match its actual age. It is rather unfortuante as I doubt I will have the chance to resample this wine again given the limited production and scarcity of this wine.

August 15, 2019 - Drank over 3 hours. Started off with lots of spice, nuts, and stony minerality. Really opened up over the first hour and a half with floral aromatics and orchard fruit becoming more apparent. The flavors were rich but the wine felt more taught than lush, acidity was present but not incredibly high. Really nice salinity on the finish. Overall a great bottle.
