  March 31, 2012 - I still love this wine and it is hanging in. This could last a couple of years yet. The Belgian beer comparison still hangs in. Also this time, strong cider notes coming into play. This is again a unique wine - one of a kind.

Reticent upon opening with hints of tart damson plum before bright saline petrichor notes with crushed rock and talcum powder, chamomile pollen, yellow wax bean, sourdough starter, cider mash and sweet yellow herbs. The oxidative nature of the wine continues on the palate with sherried aromas of saline, aloe, sourdough, plasticine, mineral and apple skin tea. Moderate acid, bitter walnut skin finish that goes on. Beautiful, quirky and intriguing.

Yes, a bit oxidative and carbonic on opening, but with air it smooths into a complicated wine with spice and citrus; from Latium, it had almost a Greek retsina thing happened. I opened it very cold and as it warmed it changed constantly.
