June 3, 2012 - Pale-mid gold. Brisk bead. Broad, fruity nose with a hint of age. Really lovely. Light, crisp, and delicate. The downy mousse really fills your mouth, there's plenty of clean, bright acidity, and a fair amount of what I'd call mushroom (though mild) on the finish. Complex minerality and plenty of pastry emerges after a minute or two. Gloriously poised, still youthful and capable of continued ageing. [Cork + cage; 12% abv; Master of Malt, £43.95]
