  March 30, 2019 - Last bottle of a case of six. Colour turning old gold. Maturity of pears in syrup, dry hay and figs while retaining a weak mineral note.
  Liqueur sensation on the palate, with a large savory bean that combined with a sweet acidity gives a long and delicious aftertaste. Excellent and complex.
  In general people do not know what is lost by not consuming some bottles of Chablis when they become mature. How has changed l'Yonne! Right master CC?
  One of the best pleasure-price ratio I've enjoyed in Chablis. And the best, totally unexpected, both for being from an unknown producer, a discredited land and a vintage reviled to precede the 2010. I have to visit this winery in my next visit to Chablis because to recommend just eight guard years is very short. Sincerely speaking I don't care the score anymore ... (3/5) Biological agriculture works.
  
  Última botella de una caja de seis. Color a oro viejo. Madurez de peras en almíbar, de heno seco y de higos brevas conservando al mismo tiempo una débil nota mineral.
  Sensación licorosa al paladar, con un gran poso sápido que combinado con una melosa acidez le proporciona longitud y un delicioso postgusto. Excelente y complejo.
  En general la gente no sabe lo que se pierde al no consumir algunas botellas de Chablis cuando se vuelven maduras. ¡Cómo ha cambiado l'Yonne! ¿Verdad maestro CC?
  Una de las mejores relaciones placer-precio de las que he disfrutado en Chablis. Y lo mejor, totalmente inesperada, tanto por ser de un productor desconocido, de un terruño desprestigiado y de una añada denostada por preceder a la de 2010. Tengo que visitar esta bodega en mi siguiente visita a Chablis porque solo ocho años de guarda como recomiendan son muy pocos. Sinceramente no me preocupa una puntuación de hace más de cinco años ... (3/5) La agricultura biológica funciona.

  August 11, 2018 - Two years since my last tasting note, five since last CT's ... and here we are!
  Cork in perfect shape. Old gold colour. Elegant aromas of honeysuckle, hawthorn flower and humid limestone. My sort of Chablis on the nose.
  Unfortunately mouth showed little restricted with an abrupt acidity at the end of the palate. A bit disappointed but perfect pairing food. Hey, it is just a nine-years-old Vau de Vey, what did you expect? However still I've got a round in the chamber. Until the last drop of the last bottle.
  
  Dos años desde mi última nota de cata, cinco desde la última de CT ... ¡y aquí seguimos!
  Corcho en perfecto estado. De color oro viejo. Elegantes aromas de madreselva, flor de espino y piedra caliza húmeda. Mi tipo de Chablis en nariz.
  Desafortunadamente, la boca se mostró un poco restringida con una acidez abrupta al final del paladar. Un poco decepcionado, pero perfecta maridando comidita casera. Oye, es solo un Vau de Vey con nueve años, ¿qué esperabas? A pesar de ello todavía guardo una bala en la recámara. Hasta la última gota de la última botella.

  February 26, 2016 - Some malicious voices speak of my proverbial tolerance to the presence of cork in the wine. For me it is rather the love for aged bottles. This is a part of those wines.
  Heady aromas on the nose with old leather, candied citrus rind and hay and nuts.
  In the mouth it is glyceric, very persistent and has lost the acidity of youth but retains a very interesting point. It has a rich bitter aftertaste and a depth without limits for an organic wine. Pitifully only two more bottles remaining.
  
  Algunas voces malintencionadas hablan de mi proverbial tolerancia a la presencia de corcho en los vinos. Para mi es más bien el amor por las botellas con años. Está es otra más de esas.
  Embriagadora en nariz con aromas a cuero viejo, a corteza de cítricos confitada y a heno y frutos secos.
  En boca es glicérica, muy persistente y ha perdido la acidez de juventud aunque conserva una punta muy interesante. Queda un rico postgusto amargo y una profundidad sin límites para un vino biológico. Desgraciadamente sólo me quedan dos botellas más.

  December 7, 2015 - Dazzling oldie golden colour.
  Lovely on the nose with aromas of citrius crust, almonds and anisette.
  Similar echoes on the palate adding crispy elements and a bitter finish.
  A perfect match for a dozen of raw oysters. btw this is a 90+ wine.
  
  Color dorado oldie deslumbrante.
  Precioso en nariz con aromas de corteza citrica, almendras y anís.
  Ecos similares en el paladar añadiendo elementos crujientes y un final amargo.
  Una combinación perfecta para una docena de ostras crudas. Por cierto este es un vino de más de 90 puntos.

  Timid lemony aroma and a few things more.
  Better if chilled specially on the palate.
  
  Menos exuberante que la botella previa. Quizás llevarla en moto para aperitivar no ha sido una buena idea.
  Tímido aroma a limones y poca cosa más.
  Mejor fresquita sobretodo en boca.
