October 4, 2013 - The Sofie is just wonderful. Belgium style ales are among my favorites, and this was done very well in my opinion. The color was a pale, lemony gold with a nice, thick, white foam that did not dissipate too quickly. The body was full, which was a little unexpected due to it having such a light color, but I’m sure that having a portion of it aged in wine barrels added to that aspect. Our favorite part of the beer was the addition of the orange peel. The citrus flavor was on the forefront, but was in no way too sweet or overpowering, which is what I believe typically happens with the addition of fruits. It likely would have gained a point or two with an additional year or two of age (bottled 6/26/12). I wish I had purchased more of these.

February 4, 2013 - Great nose of brettanomyces and sour mash. Perfect pairing with a spicy-peppery (cayenne and black pepper) tomato bisque. Refreshing on the finish, and slightly bitterish. Much better than 6 months ago. Back then it was sour, now it's refreshingly citrusy. 6.5% ABV; bottled 5/16/2012. Probably entering its prime. Serve chilled.
