    Medium-deep golden yellow color with a subtle lime-green hue. Savory and somewhat evolved nose with aromas of wool socks, some sandy earth, a little bit of developed creaminess, light notes of peanut butter, an understated hint of bruised apple and a touch of bitter almond oil. The wine is evolved, medium-bodied and dry on the palate with flavors of woolly lanolin, some evolved creamy tones of panna cotta, a little bit of slivered almond, light wizened green apple tones, a honeyed hint of dosage and a touch of chalky bitterness. Quite high in acidity with a gentle, sparse and quite creamy mousse. The finish is quite long with flavors of tangy salinity, some zesty notes of citrus rind, light woolly notes of lanolin, a hint of stony minerality and a touch of chalk dust.

    A nice, sophisticated and enjoyably evolved Crémant de Bourgogne that is in a surprisingly nice shape for one at 13 years of age. Not a particularly complex effort, but nevertheless shows good sense of development finesse, coming across something not unlike an aged Chablis with bubbles. Probably won't benefit from further aging so better to be drunk sooner rather than later. Great value at 15€.

Quite rich and developed nose with aromas of woolly lanolin that reminds me of aged Chablis, some honey, a little bit of honeysuckle, light bruised apple tones, a hint of pollen and a touch of nectarine. The wine is dry, moderately full-bodied and quite developed on the palate with flavors of honey, wool socks, some creamy panna cotta, a little bit of wizened red apple, light crunchy notes of cloudberries and a hint of ripe yet tangy Granny Smith apple. The wine is moderately high in acidity with a soft, sparse and gentle mousse. The finish is tart, cool and refreshing with rather long flavors of tangy green apples, some honeyed richness, a little bit of wool, light mineral hints of wet stones, a hint of lemon and a touch of mouthwatering salinity.

    A very positive surprise: Bourgogne has never been particularly famous for their Crémants, but this wine was still wonderfully alive and kickin' at 12 years of age! The overall feel here was that of an aged Chablis with the somewhat woolly tones and honeyed overtones - only with bubbles, of course. Most likely the wine isn't going to be evolving anywhere from here but down, so better to drink up sooner rather than later. However, there is no pressing hurry, since I doubt the wine is going to fall apart anytime soon, at least not within the next few years. Good value at 15€.
