August 27, 2021 - Having turned to champagne in the past 4-5 years, I will still keep the high note for this. It has turned into a much more winey drink. Less bubbles. Acidity is medium low now. Good fruit and nice toasty notes. Sweet. Presumably my last bottle, but no harm if I find another one in the cellar in a few years. Keeps exceptionally well.

April 6, 2017 - A beautiful wine. Actually could be drunk to anything. Having it with spanish iberico and it is a wonderful fit. Glad to have 6-8 more bottles. These can last for another 3-4 years. Oh and this is on day 3 of being open...

From the beginning this has so much vibrancy, youth and most all finesse. Let this open up (possibly decant, I didn't) it truly blossoms after a few hours.
