    February 25, 2023 - Wimps Vendredi Gras - Covington; 2/24/2023-2/25/2023 (La Trompette): Another Australian revelation. Tight, cleaner than the preceding bottle but an edge to it, good acidity and becoming somewhat savoury. We had drunk a bit by this point, and I am writing this from memory as I foolishly left my notes in the restaurant, but this was super and I'd love to taste again.

    May 30, 2022 - Pronounced blackish orangey red purple, (as in one of the most intimidating-looking brick blackish reddish-color wine that I have encountered) with a distinct watery rim. A very restrained yet sophisticated nose of matured dark red fruits, some brambly twigs and animal overtones, phenol, and moist earth. The impression on the palate is very dry, medium-bodied, very soft, medium intensity, medium structure and somehow gives you an automatic sense that this is a very good quality wine with lots going on here in a deep and satisfying way. The flavor components include well-aged mellow fruit, beautifully complimented by brambly undergrowths, lots of peppery spices, old fur, red meat, old wooden chest, moist soil, and the savory moreish qualities remind me of something between a Chinese dried plum and Filipino Chinese Kiamoy. This is drinking quite well with less than an hour of decanting. All the key features seems to be in place except the savory/acidic qualities seems to stand out quite a bit though tolerable on Day 1. I suspect that the savory aspect will eventually take over the wine since the fruit has since faded. We’ll see tomorrow. Day 2: Surprisingly, the wine became much softer and mellow than what I predicted yesterday. The sourness is still there but it tastes much more proportionate to the fruit while a nice fresh floral note has emerged. Day 3: This Victorian Syrah-Viognier blend is drinking at its best tonight! All the key components seems to be in place even the acidic aspect. Truly phenomenal! This tells me that I very well may have opened it a little bit too early. Too bad I don't have another to cellar for another 5 years or so.

    September 19, 2021 - Oak felt quite prominent here and a richer and deeper wine than I recall, though still medium weight. Some grippy tannins, plums and a little pepper on the palate, slight sourness on the finish. I feel that the Castagna wines I prefer younger.

Medium minus intensity aromas of black peer over sour black berry, a little cedar, an odd confected apricot note. Acid dominates here (as it did with the 2010 Un Segreto), a little blackberry and pepper shows beneath this, tannins are present and quite floury textured. Meh.
