November 6, 2020 - Dinner at Bar-a-Thym (Bar-a-Thym): I learnt my lesson from the last bottle and tossed this into the decanter an hour before service. This time round, it was delicious from the get-go - the bottle finished really quickly, which is always a good sign! It had such a pretty Savigny nose, with flowers and earth, red berries, strawberries, and a nice seasoning of spice. Lovely stuff. Really yummy drinking on the palate too, with gentle tannins of 2011 and a nice bit of fresh acidity lending a very charming feel to flavours of strawberries and cherries tossed up with attractive little bits of spice and earth and mineral, all riding away into a nice finish on a bed of gentle tannins. Lovely, eminently gulpable stuff.

May 1, 2020 - In true Bize style, this was a solid, stylish and understatedly delicious Savigny. It could still use a few more years in the cellar yet, but it was clearly starting to creep into its drinking window. I liked the nose, with its drifts off sweet strawberries and cherries, lined with a lovely earthy, stony minerality, and then just the tiniest hint of violets, bramble and spice around the edges. Pretty, but with an inflection of earthy masculinity to it. There was a touch of primary sweetness and a bit of oak intruding one the nose, but these were clearing fading into the background. It was certainly not an issue on the palate, which was bright and energetic, with a good flush of fresh orangey acidity and some round tannins on the attack framing a lovely, soft mouthful of cherries and red berries. These then trailed away into a surprisingly plush finish infused with a nice, warm spiciness and a little streak of mineral. Enjoyable and food friendly, this was immensely drinkable wine, yet with a nice amount of depth and breadth to it. It went a treat with an excellent dapao Beouf Bourguignon from Iggy’s too. I was really pleased with this, and am looking forward to see how the other bottles will age over the next 3-4 years. I am not sure I will be able to resist them until then though.

November 13, 2017 - Tasty and enjoyable example of Savigny; the nose has lovely red fruits, cool, airy mineral notes, lots of tasty spice and a hint of violet. The palate has lovely balance with good berry fruit notes and spice. There is structure, but it is well integrated and silky. Very good. Drinking well now and will likely hold for a few years, but not a long term cellar candidate.

June 1, 2017 - Quite a lovely Savigny, showing the open nature of the '11s. The nose is filled with bright cherry, pomegranate, red currant, spice, hints of sauvage and earth. The palate is very fresh with nice acidity, well integrated and not very noticeable tannin, with lots of red fruits, floral notes, and spice. This is very enjoyable, definitely benefits from food, and should continue to drink well for a few years. My preference would probably be to drink this in the next couple of years before the fruit fades.
