    Mineral, earth, peach, mushroom. Floral on nose.
    Full bodied, long finish.
    Went down fast, smooth.

    February 3, 2018 - Delicious. Tropical fruit, creamy mouthfeel and a refreshing minerality. Paired with manchego and guava paste and bell peppers and hummus. The precise way to start the night.

    March 11, 2017 - Fermented and aged 5 months in 45% stainless steel, 30% used French puncheons, 20% new French puncheons, and 5% concrete.
    An engaging nose shows scents of jasmine, orchard blossom and honeysuckle that are met with notes of citrus oil, peach, papaya, wet stone, flinty mineral and cantaloupe.
    On the palate rich and viscous, but fresh and bright. Flavors of peach, papaya, apricot and ripe cantaloupe meet lemon oil, orange blossom, honeysuckle and mineral that lead to delicate pink peppercorn and white chocolate notes. Dense and fleshy on the mid palate. Lingering on the smooth, slightly warm finish.
