  January 30, 2013 - A blend of Pinot Blanc (80%) and Chardonnay (20%), aged for an impressive 30 months before disgorging.
  
  Yellow-green color with an obvious golden hue. Quite rich and complex nose with lovely depth: aromas of yeasty French bread, roasted almonds, lemon zest, some bruised apple, a little baked apple pie and a hint of stony minerality. Rich and medium-bodied, yet very dry on the palate with juicy, focused and already somewhat developed flavors of honey, very ripe red apple, some tropical notes of fruit salad, a little pear jam, a hint of nutty autolysis and a touch of butter. Very fine, creamy mousse and balanced, moderate acidity. Very long, broad and quite dry finish with flavors of freshly pressed apple juice, some exotic spice, a little toasted bread and hints of grapey fruit.
  
  A truly impressive Crémant d'Alsace and one that could easily challenge some high-quality Champagnes and other quality sparkling wines. Despite being made mainly from Pinot Blanc, the wine shows very good structure, freshness and focus, showing the potential of this grape variety even in high-quality sparkling wines. Tremendous depth and complexity; even though the wine shows some developed notes, there is no doubt it could develop more in the cellar for a further 4-6 years. Really superb stuff.
