May 25, 2013 - Fantastic and unique effort from southern France that needs at least 1h of air before developing its full beauty and complexity. The spontaneous fermentation clearly shows it signs on the complex nose: chamomile and tea notes, porridge, cooked apples and candied fruits as well as hints of vanilla. Great texture and on the palate the wine adds citrus, liqourice and a distinctive minerality towards the finish into the play. A thoroughly fantastic wine far from the beaten path that you will need to try for yourself in order to capture its magic in its oddity.
