January 12, 2016 - Pascal Doquet - same wine, different dosage: Initially sharp, cold granite and minerality, you can almost smell the edgy alcohol note. Rather tart on the palate with hot but very long finish. Grapefruit and orange on the palate, but feels a bit woody. With time develops note of kiwi fruit and bread. Quite good, but not the friendliest of bottles.

December 29, 2014 - Very nice Champagne with crisp Chardonnay fruit. No dosage gives this a nice edge but it is not overly dry. Disgorged in April/May 2014 this could probably use some age to show more complexity. For a $50 Blanc de Blancs Grand Cru Champagne this is an amazing value. I like that Pascal Doquet discloses not only the disgorgement date but the % of each year in the mix. I think this was mostly 2007(a good but not great vintage). Very nice with sushi/sashimi especially tuna tartar.
