    April 7, 2023 - What always impresses me about the Noon wines is how they manage to carry high alcohols without tasting hot, jammy or overripe. 16% Cabernet should be a monster, and this definitely a powerful wine, but still elegant.
    Very perfumed with ripe blackcurrant and blackberries. Graphite and black earth. Subtle capsicum. Very smooth tannins. Sadly my only bottle, but this still had a lot of years in it despite the ripeness.

    January 26, 2022 - I have a large Noon cellar going back 25 years. All good cellar conditions. My belief is Noons drinks best 8-12 years old. This 2012 Cab still beautifully youthful in colour with long legs. Elegant claret style nose of cassis, pepper and red fruits. Sweet Cabernet fruit, softer tannins now, with acid well balanced. Good depth in the palate with capsicum, dark red fruits, and sweetness showing through. Very enjoyable with lamb lollipops on Australia Day 2022. Will stay longer if required but why bother. A good wine.

    October 7, 2019 - Bright floral and blackcurrent nose with toasted herbs, black tea and exotic cat’s pee! in the base note. First time smelling that in a red wine, probably due to the very high content of minerals. Notes from the nose extends to the palate, rich, exotic and floral, with some black tea. The salty mineral and seashell notes dominate the flavour profile. The structure is so silky smooth and open. Full bodied and fat, lacking some freshness all around. This is a wine that will generate big likes and dislikes. A touch too salty for me. It is ready to drink and should continue to keep well for another 3 years.

    Retasted in Apr 2020, nose and palate have not changed. Still very smooth but less fatty than before. Not my type of Cabernet.

    June 24, 2019 - The wine is purple and opaque with long legs. The nose is rich with ripe red raspberries, cherries, blueberries, cassis and a hint of vanilla and sage. The palate is consistent with some green pepper notes and leather. The finish is ripe black fruit. The tannins are modest, the acidity is moderate minus and the alcohol seems more like 14% than 16%. The wine is drinking well and may be a touch past peak. 5+12+17+8=91
