    September 30, 2023 - Smoky and porky with soft red fruits, well-integrated acidity and some fine tannins. With air this showed very strongly the classic Levet pepper, porky/animale and olive brine notes.
    On day 2 this shows a delightful maturing texture, the wine is better knit together, and there's now that light roast coffee/chicory thing (from stems?) that I love in both Levet and Juge. Just those lightly astringent fine tannins suggest that it's still a good way from fully mature. Next bottle in three to five years.
    Addendum - the final glass from Boston round a week was lovely and for my preferences topped a 2012 Jamet. This 2007 and 2010 are consistently my favorite vintages of Levet in this century.

    August 20, 2023 - Opened and decanted about an hour before dinner. No formal notes. The 2007 B. Levet "La Chavaroche" is flat out beautiful right now. The aromatics are off the charts with gorgeous, ripe dark fruits, a bit of the animal, a veritable hillside of lavender, black olives, some deli case, black pepper, some leather and earth. The structure is still firm but everything is well integrated at this point; superbly balanced; great acid. The finish is long and has some ferrous minerals that I simply love. A sublime pairing with a Morgan Ranch Wagyu tenderloin served with corn purée, charred broccolini and juniper ash. The 2007's are absolutely ready to drink now with a short decant (mostly to remove any sediment) however, they will continue to drink well for another 10+ easy from good cellars.

    March 25, 2023 - Off the wine list at Herons, this was paired with the '06. As I mentioned in the notes on that wine, this was an interesting contrast in vintage styles. My wife preferred the '06 while I gave the edge to the '07. This is a sauvage, animale wine, with smoked meat, game, black pepper and rustic barnyard notes. Olives, black raspberry, green peppercorns and shoe leather with a lovely floral finish. A bit wild, but seductive and beguiling.

    September 17, 2022 - Properly resolved, properly autumnal wine. Really smoky on the nose, like a combination of bonfire and smoked pork, plus plenty of earth. Still earthy on the palate, powdery-soft, with a sense of structure coming instead from the darkness of the soil and cocoa flavours. Complex, changing in the glass, seemed to be at peak.
