Community Tasting Notes 2

May 25, 2016 - Quick coravin sample. Showing better than when tasted 2 years ago. good example of red chassagne, but does not reach the quality level of Bernard Moreau's reds, which show more class and depth. Good stuff though. Will probably age for a few more years if you want. I'll drink mine over roasted chicken (as righteously suggested by the previous taster).

February 4, 2016 - First impression after being poured… the wild, exuberant aroma of berries and rotting forest floor. It leaps out so aggressively that you can almost see the fumes flying off. Now here’s why I tell people to never, never, never decant Burgundy: the aroma was greatly diminished inside of 20 minutes, leaving a subtle but agreeable strawberry-like aroma. Ephemeral and beautiful, it rewards those who were present at the moment to experience it!
On the palate, cherry and more forest floor. Extreme earthiness in this one. On the finish, a salty tang, like blood, and some surprisingly robust tannins. I don’t think this ever closed up like the 2005’s did. It will keep going for quite some time though.
Very good with beef medallions with pesto, mushrooms and bacon, but even better with roast chicken. Deadly, even.
