  February 10, 2021 - This is in its prime drinking window. Perfect cork and low neck fill level. Slightly tawny edges on open that darken with air, and that’s about how this went - as it got more and more air, it added complexity and seemed fresher. Black cherries, blackberry coulis, plums, brown sugar, dark chocolate, clove, woody aromatic herbs, black olive all showed at various points. Tannins were showing in a slightly melted form, but the acidity provided enough structure to keep it fresh. I don’t know how much better this will get, but a well-stored bottle like this shouldn’t go downhill for at least another 10 years.
