  August 12, 2019 - Loving the salty, briny, olive oil, mineral elements here, but there's also plenty of candied orange peel, apricot, with honeycomb, nuts and wax. This was a blast to show my family, and they all really enjoyed this style.

  September 17, 2018 - Light gold color. Love the nose, baked apple and apricot marmalade mixes with green olives, yeasty dough, honeycomb, candle wax, salty, briny notes. Plump and waxy texture on the palate but vibrant acidity keeps it fresh. Lots of salty, briny, green olive notes along with minerals, baked dough, nougat. Apricot and lemon curd fruit, too, but that takes a back seat. Very good stuff, complex, will age for a long time.
