    February 5, 2016 - (weeknight w elaine) Light tawny ruby in glass, translucent. Quiet upon first pouring, after 2-3 hours, expressive umami nose, dried berries, hint hawflakes, dried jujube, and meaty mushroom sousbois, along with dark florals. Gentle yet tall acid balance, sweet, savoury herbs, lifted with very fine spritz. There is a pleasant clarity and finesse about how it goes down, before blooming on the finish with mint, fennel, fine leather and some black earth. Reminiscent of Volnay in its structure and profile. Young, and could go on for decades. Paired nicely both with JM's jap-inspired ponzu steak and vintage maleny cheddar.
