  February 1, 2024 - This is a Premier Cru Michel Reybier champagne, with super fine bubbles and a mousse that seems to tickle the palate. Wonderful!
  
  Nose that is both fruity as well as having a developing sense of minerality, and a medium-full bodied mouthfeel.
  
  I immediately thought "This is a good champagne", and when I picked up the red apple notes.. Knew that it had to have some Pinot too.
  
  Cooked pineapple and biscuit as well as toasty brioche notes round off this lovely bubbly, and I love the beautiful and unique shaped bottle it came in too. Cheers!
  
  Lovely blend of 80% Chardonnay with 20% Pinot Noir. This was one of my favourites all night, and it had some serious Rieslings to stand-up to!
  
  JC reminded me who Michel Reybier was. The owner of Cos d’Estournel since 2000, who in his decision to acquire this legendary Bordeaux wineyard... it would be “Cos and only Cos.”
  
  I was wondering about the golden elephant embossed on the bottle -
  This is a symbol of Cos d’Estournel and the emblem of Michel Reybier, the elephant represents good fortune and is associated with intelligence, strength, wisdom and longevity. An omen of success, the depiction preferred by Michel Reybier brandishes its trunk upright.
  
  Thanks for this second aperitif, enjoyed tremendously at A'Romas Italian Dining, PJ, where we ushered in the Year of the Dragon a little early!

  December 5, 2019 - Surprised the ratings are not higher for this champagne. Had this at the restaurant at The Reserve hotel in Paris (owners of Cos d’ Estornal and this champagne!). Beautiful mousse, tiniest bubbles, crisp fruit and toasty flavors. A big hit with our rather large party who preferred to keep drinking this instead of switching to red wine with dinner! I will need to find some for the home cellar.

  April 20, 2019 - Champagne - 100 Vintage and NV Champagne; 12/15/2015-12/15/2020: From the name I am guessing this is from the Cos d’Estournel owner. Very pleasant Champagne with brioche, flowers, yeast. Pleasant palate with good dosage balance.
