    February 14, 2023 - Chardonnay from 20 to 30 years old vines aged in temperature controlled tanks. 13%vol. Took a small sip and decided to decant 30 minutes before dinner, but it required another 30 minutes to come together.

    On the nose a nice mixture of fresh citrous fruit, lime blossom and saltiness, on the palate good freshness, creamy mouthfeel with a long finish with a nice bitter note.

    Classic Chablis entering its mature phase without showing any premox, very good accompaniment throughout our dinner with artichoke as starter and gnocchi with salvia as main dish. Drink now or within the next 6 years and give it enough air.

    September 20, 2020 - PnP. Needs some air and to warm up to show its potential. This bottle is again on the mineral side with nice salinity, fresh, medium bodied and a long, slightly drying finish, still not at its peak. Seems that there are very different bottles, we bought two cases, one is like this, the other is more on the sweet flowering side, this one is more Chablis and the kind of wine I like.

    June 23, 2019 - PnP. Very different to the bottles I had last year, the mineral taste has been gone, on the nose lemon and white sweet blossom, still good freshness, medium+ bodied and length. Very good with fish. Blind I would not guess on Chablis, more similar to the Pouilly-Fuissé I have, curious how it will evolve in the next few years.

    April 27, 2018 - Trip to Chablis; 4/26/2018-4/28/2018: Short note. Very mineral, nice salinity, with signs of almond, fresh, good concentration, long finish. 90-92.
