April 13, 2024 - Dark and distinctive. Somebody has bottled a negroni, it's uncanny, but significantly more bitter than that drink. So bitter it is ridiculous, this sounds terrible but in a way it reminded me of bile and covonia cough medicine, which you would have to say is not a good thing! When I thought of this I immediately started to instead think about negronis, herbs, benedictine monks and aesop handwash until it passed, and then I was OK. Tons of interest but ultimately this is a tough one and very much an aquired taste. It was so intriguing it was hard to stop drinking it, and only the inbound 88 bus got me on my feet.

April 13, 2024 - France vs ROW (Home): Just give me a glass of this to sniff and turn the lights off. I love the boldness here - hugely dry, medicinal, herbal nose. I don't have the faculties to unpick what I'm smelling but it's the Northern Italian Christmas of your dreams made manifest. Honestly it's kind of challenging - initially bitter, leafy on the palate with a sweet and structured depth swelling beneath to balance it out. Feels like a remedy… and I've got the sickness

December 10, 2023 - After 3 days open: huge floral/spice nose, with nutmeg dominating. mint, wintergreen, black walnut, thick wall of tannin at the end yet but wow what a journey to get there. This bottle peaked about 10 days open (fridge-kept) and consumed last bit by end of the third week. It showed beautiful purity and seamless flavors, archetypal chinato in every way.

September 14, 2023 - I tend to lean more towards Amaro than Chinato when it comes to my preferences, but this is undeniably a delightful experience (and a Chinato that is more of an Amaro in style!). It boasts an herbal and medicinal quality, with a savory profile complemented by muddled red fruit and dark chocolate notes that leap from the glass and continue to unfold on the palate.

There's no urgency to consume this; in fact, I'm quite intrigued by the idea of letting it age gracefully for 10-15 years.
