September 16, 2020 - Final bottle from a half case bought from the then Dutch importer in 2011. Different from the bottle tasted in January of this year - suddenly this feels fully mature. It’s still fresh, but the tannins are resolved, the aromas are mature (white nuts, forest floor), the palate is silky-sweet, and there is dried fruit on the finish. Quite a nice apotheosis actually, after a life in which it was mainly difficult and hollow. Paired with the same dish as last time - a good match. Drink up if you have any left.

January 7, 2020 - After two less than impressive bottles in 2014 and 2015, this is a nice surprise. The style is cool and slender, and the finish shows its age with its tea-like character, but the nose is open and well developed, with notes of rosehip, spices, forest floor and white nuts, the palate has sufficient souplesse, with that typical Volnay “nervosité”, and the firm minerally core is buffered by just enough flesh. Classically styled, best with food. We enjoyed it with an elegant dish of spelt pasta with courgette, cherry tomatoes, parmesan cheese and fillet steak.

February 14, 2016 - The best yet out of a lot of mixed vineyard '04 Voillot Volnays purchased last year. Lightish crimson color but retained some pinot sauvage upon opening. It softened over a couple hours and took on more floral scented tones and a kind of soapy aroma that did not improve the profile for me. The fruit faded by the end and tannins were totally resolved. Was still a treat with salad and petit filet of boeuf on V-Day eve at home.

December 9, 2015 - Slightly oxidised. Certainly not undrinkable and it has retained its core of mineral freshness, but the nose is hollow and there is a hint of brown sugar on the finish. Strangely, it seems to have improved slightly on the second day, but it remains flawed.
