    February 7, 2016 - Trying to ration these as long as possible, and I am firmly convinced that I'm going to have to take the last one to long term storage to get my hands off it. This wine is absolutely gorgeous. This bottle seemed softer and less acidic than it was when first purchased 8-9 months ago. This wine is all about the fruit, and complements anything. You need only to want to drink a bottle of wine, and this bottle will go with it. Strawberry cream with an earthy goodness that adds intensity and complexity. The acidity on the front gave way to the fruit rather easily this time. The middle of this wine is soft, delicate. The finish is powerful with a tiny bit of grit. Probably isn't the BEST to pair this with a steak or ribs, but it certainly wouldn't be overpowered. Great Rose. Can't wait until the next vintage's release....because there probably won't be any left!
