  Day 3: I left about 1/4 of the bottle out on the counter and revisited. Air has done this some good, reducing the apparent sweetness and increasing complexity. This is rounding into a very nice wine.
  
  Drinking well now with air, better in five years.

  I was able to spend more time with the wine than my previous bottle and it’s quite yummy now and should continue to improve. But if you like your Riesling on the youthful side it’s certainly a pleasure to drink today.
