At about the 7 hour mark it finally found some balance--less sweet, better fruit, more structure. A good wine here but just too young. Let them sleep.

    May 3, 2022 - Decanted about 2+ hours. Some Rocks District funk on the nose with a little of the typical Walla Walla cabiness. Smooth wine paired with a grilled rib-eye and corn. Very nice.

    September 26, 2021 - Double decant. Blueberry and plum. Meaty. Bright tart fruit on the long lingering finish. Doesn’t really drink like a cab. Delicious wine.

    July 20, 2021 - If you like the taste of hot alcohol rolling across your tongue you will enjoy this more that I did. Deep purple-red, thick and viscous, extremely concentrated. The label says 14.4% ABV but it feels higher. It could be an Aussie Shiraz except that it’s all Cabernet Sauvignon. I think the hyper-rich Cayuse style is more suited to Syrah.
