June 30, 2020 - Drank with a salad with avacado and finally with Ibores, an unpasteurized goat cheese from Spain. I apologize for comparing this to NZ Sauvignon Blanc, but I've drunk many bottles of that and maybe only a couple of bottles of French SB. The legs are low, color more golden than NZ, on the nose fresh herb and green, unripe peach. On the palate very zesty and tingly, almost to the extent that one would imagine it to be carbonated. Very tart, cut the fatty and salty cheese quite well. With NZ SB I get grass and grapefruit. With this Pouilly Fume I get unripe peach or unripe green apple and some type of herb. I don't really get the smoke part.
