    December 4, 2020 - Perman Champagne Night (Zoom, Chicago, IL): Nose: Where the Les Noces Blanches was vibrant and pristine, this shows more robustness with hazelnuts, red fruits, berries, spiced pears, honeydew, custard, brioche, baking spices, and pastry tones. There is excellent depth with the autolytics showing through more.

    Taste: The feel is Medium bodied with mouthwatering, high acidity. There is some density to the feel with hazelnuts, red fruits, spiced pears, berries, brioche, baking spices, custard, and some pastry tones.

    Overall: This shows off a very different side than the Les Noces Blanches. It's also extremely good and balanced showing off more autolytics along with excellent red fruits.

    February 14, 2020 - 100% Pinot Noir Blanc de Noirs is a trip. First off, the color is this insanely deep gold with a tinge of pale copper to it. This is not rosé, but is just ever so slightly copper in its coloring.
    On the nose you get lemon peel, brioche, and honeydew. Interestingly enough, independently Mot said honeydew was light and at the back of the nose while I saw it as forward. Otherwise we agreed on scent.
    The taste was lemon peel - bright with other citrus notes and a hint of pleasant backend bitterness. The bubbles are playful, and this champagne feels alive.
    This NV drank more like a young vintage champagne than a typical NV... will probably buy this as our go to NV and try to age one or two bottles for the hell of it.

    December 5, 2019 - Perman Champagne Night (Perman Wines, Chicago IL): Nose: The nose is well balanced and robust with spiced pears, peaches, red cherries, vanilla, licorice, biscuits, saline, herbs, brioche, baking spices, and pastry tones. There is good depth with great integration of the autolytics with a bit of bruised quality to the citrus.

    Taste: The feel is Medium bodied with tart, high acidity. The feel is well balanced and autolytic-driven with spiced pears, white fruits, red cherries, licorice, vanilla, herbs, biscuits, baking spices, and pastry tones.

    Overall: This is a lovely Blanc de Noirs that favors the autolytic side of the spectrum.
