May 12, 2023 - this wine is 100% Pedro Ximenez aged 10 years in solera. Intense aromas in the glass and packed with notes of seaside salinity and brine, almond, olive, thyme flowers and in the background scents of yeast, dried pear and plantain. The palate is slightly richer and perhaps with less acidity than it's Palomino counterpart, but flavors mimic the nose with great intensity and the finish lingers on and on.

May 2, 2022 - Very similar to a better fino Sherry, similar acidity and flor to my palate. Very nice as an aperitif or with food.

July 16, 2019 - First taste of this as more accustomed to palomino based finos. This is interesting as I find all of the characteristics of the flor, but a slightly heavier bodied texture with a touch less acidity and freshness. Still very good, but probably due to habit, I think I may currently prefer the Tio Pepe. That being said, a very good length which seems to end up switching to a faint banana aroma. A good though slightly different Fino
