    June 21, 2021 - Monthly Boys' Wine Night - Champagne & Old Bordeaux (Island Room, Hong Kong Country Club, Shouson Hill, Hong Kong): From magnum. Deeper yellow colour than the preceding Cristal 2006. Very active mousse and persistent bubbles. Beautifully crisp, precise and very young on the nose.....gunflint. Steely and Epsom salts on the palate. Razor sharp reflecting very low dosage and mainly stainless steel fermentation. It warmed up and showed more body and layered depth as the evening progressed. I loved this. 92+ for now and can only get better, i think. Thanks Nico!

    January 15, 2021 - Prestige BdB from Cazals vintage 2005. Low dosage (2g/l), mostly fermented on steel (10% is wood fermented promoting MLF) 12y sur latte and 4y on bottle.

    Yellow apples, honey, lees, toast and vanilla

    Served slightly overchilled a well balanced wine appears with an acidity and mousse that is able to cope with the sweet primary- and age/lees-related aromas. Long finish with lots of sweet and caramelized notes. Good integration.

    As the wine warms the acidity looses power and the wine becomes overly sweet.

    January 1, 2021 - Very pronounced nose. Very yeasty note, gun powder, citrus fruits, the best plot they have. The nose is better than palate.
