    August 7, 2017 - Medium dark red. Black berries. Strong alcohol but well integrated so easy to drink. Complex. We all liked it.

    April 29, 2016 - Sepia with Elaine and Chirong (Sepia, Sydney): Nose is an explosive riot of dark spices and dark/red fruit, medicinal notes, fresh herbs and fermented spices! Hot, complex, dark and ashy, with scorched black earth. Toasted capsicum and menthol, lifted with juicy fruit, racy acidity, prunes and plums. Chewy orange peel and fine velvet tannins on the finish, rather savoury. With time, a toasted note emerges, with root herbs like ginseng, angelica and cordyceps. Certainly an incredible, distinct wine, and very educational. Pairing worked really well with the charcoal grilled wagyu karubi, pine mushrooms and kombu.
