    Double decant (into decanter, back into bottle 30 min later) helps the brett blow off. No more poop aromas but now the wine seems shut down. Not much going on with the nose or palate. Could be due to my vigorous decanting or maybe the wine is in a closed phase. I don’t know if I would hold remaining bottles or just single decant about 2 hours prior to consumption.

    November 1, 2019 - Medium light red. Nice secondary nose, black berry, black cherry, earth and smoke. Dry berry flavours and an incredibly high level of acidity. The finish is dominated by the acid.

    December 4, 2018 - A fresh, pretty version of this wine, which is exactly how Eric wants it. Savory notes wrap around the syrah fruit with all sort sof other scents including herbs and a hint of smoke. The way it all fits together makes for easy drinking. We had this without food. It doesn't need any more time and I'll be drinking our remaining bottles over the next couple of years.
