    January 25, 2024 - Tasted 6 wines with a small group: 5 of 6, not blind.
    (2nd day this was opened)
    - Light Ruby, unfiltered appearance
    - Very perfume-y, Blood orange, sweet red fruit, smarties, chalky, peach
    - [ ] Med+ acidity, low tannnins, med slightly bitter finish, crunchy fruit, stemmy

    I tried this wine out of multiple glasses the day before (pop and pour) and here were my observations:

    Zalto Burgundy:
    Perfumy fruit
    Acidity more pronounced than Bordeaux
    Med body, bright acidity, subtle but grippy tannins linger on a really long finish

    Zalto Bordeaux:
    Dusty books, not much fruit, then came the smarties candy
    Acidity least pronounced

    Grassl Cru
    Loads of minerality. Petrichor, wet rocks, smarties candy. Pronounced acidity

    Grassl Liberte:
    Crunch red fruit with minerality (mix between Zalto Burg and Grassl Cru)
    Pronounced acidity

    December 12, 2023 - Light yet very correctly colored Pinot. Surprisingly robust nose, first impression was way off the terroir chart with earthy pencil shavings and a little bit of leathery cask. (Wait? This is no Bordeaux!) Next tier, on the other hand, very fruity. Pun intended. Jam, coulis, sorbet, strawberry pie. Still with plenty of shavings. Somewhat tight out of the bottle, no surprise there as this can likely celler for many more years, but loosened up nicely within the first 15-30 minutes and had improved significantly by the second hour. And for such a light and quaffable Bourgogne, it maintained a surprisingly broad profile. Covers it lightly, but covers a lot. Mostly strawberry, with some pale raspberries, unripe blueberries (equivalent to ripe American blueberries), blackberries and wild cherries. Even slight hint of apple, gooseberry and crowberry. Went surprisingly well alongside spiced up thai caserole with coconut milk! And yes, the pencil shavings are still there on the nose. Oh, well.

    August 14, 2023 - Precisa de mais de uma hora respirando para domar a acidez e os taninos, como esperado de um vinho natural. Talvez a safra não seja das mais exuberantes, mas, ainda assim, vale a pena. O carater quase selvagem marca a assinatura da obra pelo produtor

    August 31, 2022 - Double decanted before serving. It is rather tight compared to most 2015s. It eventually takes another hour to fully open up. Nice strawberry fruit and spice on the nose and palate. Give it more time. 90-91

    August 10, 2022 - Takes a few hours to open up, then develops an interesting perfumed taste. Mild+ tannins and quite a light body.
