April 11, 2023 - Brought to an omakase dinner at Sushi Amane which is a total favorite of mine. This was drinking great. Very classic and clean. I worried it might be a bit big for the food but actually it was soft and gentle and yet delicious. Made the food better which is hard since it started so great. Wonderful.

September 5, 2021 - Rose gold hue.
Aromas of baked apple, almond, butterscotch, dried apricot, and brioche.
Palate is medium plus body, medium acidity, and still effervescent.
The flavors definitely show age but the firmness on the palate leads me to think this still has plenty of time. This is delicious and should be enjoyed now and over the next 10+ years. -

May 17, 2020 - Really drinking well. This was nicely aged, but still had some of the fruit. Had as part of a tasting with Cyril Delarue. Enjoying the Sunday bubbles tradition.
