  Wow. Just an explosive mouthful of almost crystalline apple reduction, with lots of development coming in from the corners. So much sweetness to the fruit here despite this being a non-dose Champagne.

  November 26, 2022 - In a really good place right now. Starting to show maturation, but is still fresh and very appealing. It would be hard for anybody not to like this wine at this current stage. Bone dry and high acidity, yellow apple, white flowers, hazelnuts, brioche and yoghurt.

Still crisp, but this has clearly passed into its mature, secondary phase. It is farther along than the 2008 Champ Cain which we had a few weeks ago.
