December 4, 2019 - Generous, round, and firm. Wouldn't budge for a few hours in the decanter. Still tight. Not tough, but really rich. Softer acidity given the vintage. Prefer a cooler vintage when we're talking Chablis, but it was tasty, if not mono-dimensional. Nice lemony citrus flavor. Missing the earth component. Served with PEI mussels. Nice.

February 16, 2018 - Wonderful and classic Chablis. Pale straw color. Nose is Granny Smith apple. Initially lemony on the palate then finishes with crisp acidity and lots of minerality.
