    April 3, 2022 - Poured with an aggressive mousse and it had the most beautiful pink/orange salmon color!

    Nose was actually quite subtle and feminine and gave off red apple, pomegranate seed, fresh strawberry, cherry, some pink citrus and only a tiny bit of brioche. Feels very light.

    But if you then think it's a light champagne, the palate completely fools you... There's so much more power and weight! Red apple, blood orange, pomegranate seed, slightly unripe redcurrant, green strawberry and sour cherry give way for a sharp and significant acidity paired with this lovely and complex fruitiness from so many different groups. But arriving just after is the nuttiness, quinine (as in tonic water), toasted brioche and this funky earthiness just adding into the complex layers. Again it's all swept off the tongue by the persistent acidity and clear-cut minerality leaving the slight bitterness of the blood orange and all the red fruits lingering on the back of the tongue.

    Extra brut 3g/L.

    Rose golden color.
    Nose red berries, slightly caramelized honey note. Some brioche.
    Palate tart acidity, a richness of body, a mineral basis balanced by raspberries and early season strawberries. Orange pith.
    Wonderful with sushi.
