December 28, 2010 - This one was better, but definitely past peak and fading. Much softer than first few bottles in 07. Sort of like liquid apple pie. Somewhere in 08-09 this hit its peak.

November 17, 2010 - Experiment time. Seven year old roxburgh. A bit darker, medium gold now. Baked apple dominates the nose, and the palate. Subtle nuances of fruits and spice. This has mellowed considerably, feels like it is fading. Still acidic, but not the monster it was before. Not bad, certainly drinkable on its own. Might have been better a couple of years back.

April 22, 2007 - Can't rate this one. Roxburgh is typically Burgundian and does not fare well with US consumers. This one is extremely lean and acidic, minerally and smoky. Hardly drinkable on it's own, must have food. When paired with the right food, WOW! An eye-opening experience in wine-food pairing. Rumaging through the kitchen... Good with cheeses, great with corn polenta, with smoked polenta, awesome! The smoke/smoke match is unbelievable! Matching acid/acid... olives are great, but the unbelievable match was with hard salami/havarti. The acidic meat flavors and wine just exploded together, and the creamy havarti melded together the best wine-food match ever. Stand alone this wine is sub-par, but paired correctly it is the best chardonnay I've ever had. Set 2 aside for aging. Put this one in a tasting 4 chardonnays, all agreed this is not very drinkable on it's own but was clearly the best of all with food. With food, 90+, w/o food 75
