February 4, 2017 - Bevuto al ristorante Contraste a Milano.
Avvicinarsi ad un vino con più di 26 anni è quanto meno rischioso.
Il tappo era completamente infiltrato con un odore sgradevole. Anche la sommelier era perplessa. Ciò nonostante al primo assaggio non presentava alcun difetto. Per la prima mezz'ora profumi e sapori sono rimasti chiusi e in sordina. Alla richiesta se volevamo scaraffarlo ho rifiutato in quanto timoroso di rompere i sottili equilibri di un vino così vecchio. Dopo un ora si è aperto in tutto il suo splendore. Molto minerale sia al naso che in bocca era seta con profumi e sapori meravigliosi. Soldi spesi bene. Prima volta che mi imbatto in un pinot nero così vecchio. Grande esperienza.
