The few years since last drinking have made the oak element more visible, limiting its ability to pair with cheese.
Still excellent as aperitif, trending down on pairing with main course

July 15, 2017 - Drunk with chicken in tarragon sauce
Initially made a beautiful balance to the sauce; fresh with enough intensity to work with, acidity and lemon threaded through riper fruit. With brie, demonstrated classic Chablis minerality and steel.

May 5, 2017 - An unexpected experience to be tasting Chablis in S Australia, a 1er cru that I believe is available only down under....
Classical Chablis steel and mineral nose with hints of lemon
Long smooth texture, crisp acidity, long citrus and mineral
Beautiful, to extent that I have made personal import from Oz
