    September 27, 2023 - It’s a high acid Aussie Cabernet style even if the fruit flavour is modern, not heavy - it’s like Hawkes Bay or Margaux (not like Barossa, nor California).

    Many years ahead of it. Don’t be fooled by the pretty low tannin style.

    May 7, 2020 - 2015 Stella Bella Cabernet Sauvignon was developing, and showed good notes of ripe dark fruits, herbs and spices. The Margaret River Cabernet Sauvignon was clear and medium ruby in colour with traces of sediments. On the nose, there were notes of ripe blackcurrants, prunes, vanilla, eucalyptus and Oriental dong-quai spices. On the palate, it was dry and medium-full bodied, with rather high levels of fresh acidity and chalky tannin. The finish was medium in length, with flavours of baking spices, ripe blackberries and bay leaves. The herbal and spicy characters might trouble some drinkers who expected more fruit-driven Cabernet.

    From the winery website, the wine was pure Cabernet Sauvignon planted throughout vineyards in Southern Margaret River. Each parcel was vinified separately, with cold-soaking to extract fruit flavours and colour. The juice was fermented on the skin for up to 18 days, and the wine was aged in 32% new French tonnellerie’s barriques for 17 months. The drinking window up to 2030 was recommended.

    December 22, 2019 - Rich but with a savoury green olive seam that runs all the way through. Hmm, not sure about this, need to try again, preferably after more bottle age.

    Another elegant Margaret River cab sauv with ripe cassis and good heat. Smooth and easy-drinking.
