October 5, 2019 - No longer re-fermenting in bottle and has settled down. Remains a riper expression (La Chaux and being 2015) but is in not hot, has the wildness, quite big and rich in the mouth for Les Dolomies, but still has the acidity to carry it well

October 21, 2017 - Re-fermenting. Cloudy and fizzy, and showing a more "natural wine" nose for it. Still delicious nevertheless
