    March 21, 2012 - This was a fascinating education in old wine. Bottle was purchased for a song given its fill (low neck, just barely into the shoulder) and age, but even with that I was willing to write it off as an experiment. Cork came out in one piece, very dry at the top but damp about 80% of the way up. First surprise - it still smelled like wine! and not something worse. Came out a dark orange color reminiscent of an aged Nebbiolo. First impressions: nose shows much more oxidation than the palate, and both are showing damp, earthy scents and flavors, but with a prickly resinous flavor and piercing, almost shrill acidity, with pretty much no fruit or mid-palate. BUT over the next two hours, every new pour was darker in color, bigger on the nose and palate, and with hints of fruit starting to peek out, while getting even more loamy, earthy, mushroom and truffle-y. So amazing to watch it evolve so dramatically in the bottle and glass after opening! I felt it was starting to break down a bit after about 2 hours, but it was gone by then anyway. Note: food (salty cheese, saltines) totally ruined it. definitely a wine for contemplation, not as a food accompaniment!

    July 18, 2010 - Tonight's gonna be a good good night; 7/17/2010-7/20/2010: Tons of chinese medicine "yuk choy" - ling zhi, angelica roots, other dried chinese root herbs, some bbq savoriness . Dried century old aged leather with dried raspberries, dried preserved plums, really dried up but what dominates is a constant bloom of umami-ness. Has remnants of graphite and black chinese tea at the mid to end.

    July 17, 2010 - Cellar Raid at ES (Extra Space, Singapore): From a 375ml. I thought this was lovely. Guessed it as an old Pauillac, but thought it was a stronger vintage, perhaps 1975. Cloudy in colour, almost a light, dusky tone. Nose was all dried roots and Chinese medicine at first - lingzhi, angelica root, tree bark - but after some time, it took on dried fruit tones, almost with preserved plums, red dates, and plenty savoury umami and soy notes. Lots of age on the nose, with just a bit of graphite scents at the edges pointing towards Pauillac. Intriguing, and palate was no slouch either. Lots of dried fruit, plums, dates, dried fig skins, dried blackcurrant fruit, all still with a fantastic fresh balance, moving into a finish full of dried fruits. There was a hint of mahogany here, a touch of stilled tea, and still some structure too. Tons of character on this wine, it probably exited its peak drinking window about a decade ago, but this was still going strong, and it really put a smile on my face.
