    March 3, 2024 - Burgs, Birds, and Black Truffles (My place, Portland OR): This was a little dried out at first. After about two hours open, it did flesh out and darken somewhat in the glass. The nose is balanced, perfumed, and savory with raspberries, sour red cherries, cranberries, leather, dried sour red fruits, earth notes, tobacco leaf, and some violets. The Medium bodied feel is balanced with tart, medium+ acidity and slightly drying, medium tannins. This bottle feels like it is on the downslope, but there is still a lot there to give joy. I may have liked this more on its own, but it paled in comparison to the 06 and 08.

    April 25, 2023 - Seventh bottle from a case that I have not touched for 5 years. Wow the stern tannins and the austerity have gone at last - thank goodness. Niff of old socks on opening vanished quickly. This wine still needs food and is still has a stern streak but now it works to help. Tonight it was a delightful Savigny, an aethereal delight. Nuanced, balanced, long and lovely. An object lesson in keeping these wines for more than 20 years. On this bottle evidence I'd say there is good reason to think there is at least another 5 years here.

    (Pavelot Jean-Marc et Hugues Savigny-lès-Beaune Les Dominode) Medium cherry-red. A high-toned nose that starts with a little oaky influence before settling into a wide, red raspberry/cherry blend. Athletic, lithe bodied - no fat - lovely acidity and a fruit concentration that seems to grow in the mouth. Less obviously tannic than the 2000, this is a lovely, classicly styled and obviously young wine, but a definite re-buy.

    (Pavelot Jean-Marc et Hugues Savigny-lès-Beaune Les Dominode) The colour is a little darker. The nose commences with primary cherry-fruit and only very slowly gives up additional complexity. [Hugues often fins the Dominode to be a 'simple' wine in it's youth] Seems fresher than the Gravains, primary and quite tight in the mouth, most of the complexity is found on the finish. This is quite elegant, and it's interesting to contrast vs the extra bulk of the 2002.

    (Pavelot Savigny-Les-Beaune "La Dominode") Gorgeous nose of blueberries, smoke, minerals, raspberries and fresh tweed. Lush and concentrated on the palate with great finesse and swet ripe tannins. Oh this was some succulent lip-smacking Burgundy.
