    October 10, 2021 - Fragrance of passion fruits, Manuka honey, honeysuckle florals and mild spices. Sizzling acidity on the entry, followed by a burst of juicy citrus and tropical fruits, honeyed and mineralic. Good volume and length here with a trailing zesty finish. Very nice base Chablis.

    April 1, 2021 - Found a 2016 at a local wine shop and was very excited to try this. I've heard great things about Domaine Pattes Loup / Thomas Pico from those whose opinion I trust, and this did not disappoint. I brought this to a sushi restaurant and upon popping, pouring, the first sip was very impactful; particularly how it really hit your saliva glands and induced quite a bit of salivation from its acidity (and in a very good way). The chef who tasted some much later in the meal equated it to really good sushi vinegar which I thought was a fun comparison. Given that the bottle is entering its 5th year of aging, some secondary and tertiary characteristics already started blooming. The overall mouthfeel, aroma, balance, and surprising ease / drinkability was astounding. The nose had nuanced lemon, and there were profiles of other people's premier cru Chablis in it, including notes of starfruit, maybe a bit of grapefruit, pineapple, ripe pear in a very interesting way. A delightful match with a majority of the sushi I had, which from a pairing perspective easily surpassed the ultra smooth Dauvissat Forest 2015.

    Nose is clean, medium intense aromas of lime, greene, chalk, limestone, dragonfruit, hint of honey, developing

    Palate is dry, medium+ acidity, medium alcohol, medium+ body and flavour intensity and dry-extract, aromas of greene apples, lime, oysters, ripe greene gooseberry, limestone, long finish

    The wine is very well balanced, long fruit driven finish, medium intense but the most impressive is the concentration which is very solid especially for a Chablis, medium+ complex. Very good quality 90p with a potential for higher score in the future.
